  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce (to serve)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping the outside in tin foil and lightly greasing the inside.
  3. In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the springform pan.
  4. For the apple filling, peel and slice apples, toss with brown sugar and cinnamon, and set aside.
  5. Beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs; mix until combined.
  6. Layer half of the cheesecake batter in the pan followed by half of the apple filling; repeat layers.
  7. Prepare crumble topping by mixing flour, brown sugar, cinnamon, oats, and melted butter; sprinkle on top.
  8. Bake in a water bath for about 60 minutes until set with a slight jiggle in the center.
  9. Allow cooling gradually in the oven before refrigerating overnight.
