- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
- 1 teaspoon vanilla extract
- 1/2 cup sour cream (room temperature)
- 3 large eggs (room temperature)

Instructions
- Preheat your oven to 350°F (180°C).
- Prepare a 9-inch springform pan by wrapping the outside in tin foil and lightly greasing the inside.
- In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the springform pan.
- For the apple filling, peel and slice apples, toss with brown sugar and cinnamon, and set aside.
- Beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs; mix until combined.
- Layer half of the cheesecake batter in the pan followed by half of the apple filling; repeat layers.
- Prepare crumble topping by mixing flour, brown sugar, cinnamon, oats, and melted butter; sprinkle on top.
- Bake in a water bath for about 60 minutes until set with a slight jiggle in the center.
- Allow cooling gradually in the oven before refrigerating overnight.
