  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cucumber, diced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup fresh salsa (store-bought or homemade)
  • Optional: 2 cups mixed greens for serving

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Season the shrimp with garlic powder, salt, and pepper. Cook the shrimp in the skillet for about 2-3 minutes on each side until pink and opaque.
  3. While cooking the shrimp, chop the avocados, tomatoes, red onion, cucumber, and cilantro.
  4. In a large mixing bowl, combine the cooked shrimp with all chopped vegetables. Squeeze lime juice over the mixture and add salsa. Toss gently until well combined.
