Ingredients
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
- 1 Tablespoon olive oil
- 1/4 teaspoon salt (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder (or chili powder)
Instructions
- Preheat your oven to 400°F.
- Peel and chop the sweet potatoes into 1/2" chunks, and chop the onion into 1-inch pieces. Toss them on a lined baking sheet with olive oil, garlic powder, chipotle powder, and 1/4 teaspoon of salt. Roast for 20 minutes.
- After 20 minutes, add broccoli florets to the baking sheet with additional olive oil and salt. Place the chicken breasts on the pan and brush with 1/4 cup BBQ sauce. Roast for another 15-20 minutes until cooked through.
- Shred the chicken directly on the pan with two forks and mix with remaining BBQ sauce. Serve immediately in bowls along with roasted vegetables.
