  • 1 cup crumbled cotija cheese
  • 1/4 cup lime juice
  • 1/4 cup olive oil + 1 Tbsp.
  • 1 shallot (about 3 Tbsp. minced)
  • 1 Tbsp. honey
  • 1/2 tsp. sea salt
  • 1/8 tsp. black pepper

Instructions

  1. Cook quinoa according to package instructions using vegetable broth or water; let sit for 5 minutes after cooking.
  2. In a large bowl, whisk together lime juice, olive oil, minced shallot, honey, sea salt, and black pepper until emulsified.
  3. Rinse and drain black beans; chop cilantro and crumble cotija cheese.
  4. Fluff quinoa with a fork and mix it into the vinaigrette. Add black beans, cilantro, and cotija cheese; stir until well combined.
  5. Chill the salad in the refrigerator for at least an hour before serving for the best flavor.
