  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar (for filling)
  • 3 cups blueberries (fresh or frozen)
  • 2 large eggs
  • Zest of two lemons

Instructions

  1. Preheat the oven to 350ºF (177ºC) and prepare an 8" x 8" baking pan by lining it with foil.
  2. In a mixing bowl, combine melted butter, sugar, vanilla extract, salt, and lemon zest. Gradually incorporate flour until mixed; press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes until lightly golden; let cool.
  4. In another bowl, beat softened cream cheese until smooth, then add sugar, lemon zest, eggs, yogurt or sour cream, lemon juice, salt, and flour. Mix until creamy.
  5. Fold in blueberries gently. Pour over the cooled crust and spread evenly.
  6. Bake for 45-50 minutes until set in the center; allow to cool before refrigerating for at least two hours before slicing.
