Description

  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces room temperature cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a large bowl, mix melted butter and brown sugar until combined. Stir in the egg and vanilla extract.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add dry ingredients to the wet mixture until just combined. Fold in shredded carrots.
  4. Pour batter into the prepared pan, spreading evenly. Bake for about 40 minutes or until a toothpick comes out clean.
  5. While baking, beat together cream cheese and granulated sugar until smooth. Mix in egg yolk and vanilla extract.
  6. Once bars are baked and cooled, frost with cream cheese mixture.
