- 1 cup packed light brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder

- 1 cup shredded carrots
- 4 ounces room temperature cream cheese
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a large bowl, mix melted butter and brown sugar until combined. Stir in the egg and vanilla extract.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add dry ingredients to the wet mixture until just combined. Fold in shredded carrots.
- Pour batter into the prepared pan, spreading evenly. Bake for about 40 minutes or until a toothpick comes out clean.
- While baking, beat together cream cheese and granulated sugar until smooth. Mix in egg yolk and vanilla extract.
- Once bars are baked and cooled, frost with cream cheese mixture.
