- 1/4 cup (50 g) granulated white sugar
- 1/2 tsp pumpkin pie spice
- 3/4 cup (168 g) unsalted butter, softened
- 1 cup (220 g) light brown sugar, packed
- 2 egg yolks, at room temperature
- 2 tsp vanilla
- 1/2 cup (122 g) canned pumpkin puree
- 1 3/4 cups (219 g) all purpose flour, spooned and leveled
- 1 tbsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix granulated sugar and pumpkin pie spice; set aside.
- In a large bowl, cream together softened butter and light brown sugar until fluffy. Add egg yolks and vanilla; mix well.
- Stir in canned pumpkin until smooth.
- In another bowl, whisk flour, baking soda, baking powder, salt, and pumpkin pie spice together.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Scoop dough onto the prepared baking sheet. Flatten slightly and sprinkle with sugar topping.
