  • 1 ½ lb chicken breast
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 2 tbsp olive oil
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 1/4 cup pasta water

Instructions

  1. Boil pasta in a large pot according to package instructions until al dente.
  2. Mix seasonings (paprika, oregano, garlic powder, thyme, salt, pepper) in a bowl.
  3. Pound chicken to thin; season both sides with the spice mix.
  4. Heat olive oil in a skillet; sear chicken for 5 minutes on each side.
  5. Cover and cook on medium-low heat until cooked through (internal temp 165°F).
  6. Remove chicken; melt butter in the same pan and add shallots and Italian seasoning.
  7. Stir in flour, chicken broth, and heavy cream until smooth; add parmesan cheese until melted.
  8. Combine cooked pasta with sauce; add reserved pasta water as needed.
  9. Slice chicken and mix into pasta before serving hot.
