- 2 tablespoons olive oil or 1/4 cup water/broth

- 1 1/2 teaspoons turmeric
- 1 heaping teaspoon garam masala
- 1/2 teaspoon cayenne
- 1/2 teaspoon mineral salt
- 2 cans (14oz) diced tomatoes, with juices (or 4 tomatoes chopped)
- 2 tablespoons tomato paste
- 2 cans (14oz) chickpeas (garbanzo beans), drained and rinsed
- 1 can (15oz) coconut milk (full or low fat)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and cumin seeds; sauté for 5–7 minutes until onions are golden.
- Stir in minced garlic and ginger; cook for an additional 1–2 minutes until fragrant.
- Add turmeric, garam masala, and cayenne; cook for another 1–2 minutes to release aromas.
- Incorporate diced tomatoes and cook for 4 minutes until softened.
- Mix in tomato paste, drained chickpeas, and coconut milk; stir well.
- Bring to simmer; cover and cook on low heat for 25–30 minutes, stirring occasionally.
