  • 1/2 cup water
  • 4 egg whites
  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar (for meringue)
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • Powdered sugar (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Spray ramekins with cooking spray; optionally dust with granulated sugar.
  3. In one bowl, whisk together powdered sugar, cocoa powder, and flour.
  4. In another bowl, mix low-fat milk and water; add to dry ingredients and stir until smooth.
  5. Beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar and beat until stiff peaks form.
  6. Gently fold one-third of the egg whites into the chocolate mixture, then fold in remaining egg whites until just combined.
  7. Pour mixture into prepared ramekins and bake for about 20 minutes or until puffed and set.
  8. Dust with powdered sugar before serving warm.
