  • ½ tbsp chili powder (optional)
  • ¼ cup oil (e.g., olive oil)
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook noodles according to package instructions until slightly undercooked. Drain and rinse under cold water.
  2. In a large heatproof bowl, combine cilantro, minced garlic, shallot, curry powder, sugar, and chili powder.
  3. Heat oil in a pot until hot; pour it over the mixture in the bowl and stir well.
  4. Add vegetarian mushroom oyster sauce, dark soy sauce, and lime juice; mix thoroughly.
  5. Toss cooked noodles into the bowl until evenly coated with the sauce.
