  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the bananas until smooth. Add melted vegan butter, maple syrup, almond or oat milk, and vanilla extract; whisk until combined.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Prepare the cinnamon swirl by mixing melted vegan butter, light brown sugar, and cinnamon in a small bowl.
  6. Pour half of the banana batter into a greased loaf pan; add half of the cinnamon swirl mixture on top. Layer with the remaining batter and finish with the rest of the swirl filling.
  7. Bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
