  • 1 egg
  • 1/2 cup whole milk
  • 3 cups fresh or frozen blueberries
  • 1/2 cup sugar (for streusel)
  • 1/3 cup cake flour (for streusel)
  • 1/2 tsp cinnamon (for streusel)
  • 4 tbsp cold butter (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. In one bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until fluffy. Add egg and vanilla; mix until combined.
  4. Alternately mix in dry ingredients and milk until just combined.
  5. Gently fold in blueberries without crushing them.
  6. Spread batter evenly in the prepared pan.
  7. For streusel topping, mix sugar, cake flour, cinnamon, and cold butter until crumbly; sprinkle over the batter.
  8. Bake for 35–40 minutes until golden brown and a toothpick inserted comes out clean.
  9. Let cool for at least ten minutes before serving.
