  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper, sliced
  • ½ cup chopped cilantro
  • 2 carrots, cut into strips
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • ¾ to 1 cup water

Instructions

  3. Add half the cilantro and water; cover and cook for 12-15 minutes until vegetables are tender.
  4. Season the salmon with salt and place it in the pan, ensuring it's coated with sauce. Cover and cook on low heat for 20-25 minutes, spooning sauce over fish halfway through.
