  • For Cream Cheese Frosting: 8 oz softened cream cheese, 8 oz softened butter, 2½ cups powdered sugar, and additional crushed graham crackers.

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together butter, granulated sugar, and brown sugar. Add eggs and vanilla extract; mix until smooth.
  3. In another bowl, combine flour, salt, baking powder, and baking soda. Gradually add this mixture to the wet ingredients, then fold in crushed graham crackers.
  4. Use a cookie scoop to portion out dough; roll each ball in additional crushed graham crackers. Flatten slightly and place on prepared baking sheets.
  5. Bake for 8–10 minutes or until edges are golden brown. Let cool on a wire rack before frosting.
