Ingredients
- 5 slices of bacon
- 1 lb ground beef
- 1/4 cup butter
- 1/4 cup diced onion
- 2 sticks diced celery
- 1/2 teaspoon minced garlic
- 6 tablespoons flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1 lb Yukon potatoes, peeled and diced small
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- Cook the bacon in a large pot over medium-high heat until crispy. Remove and drain on paper towels.
- In the same pot, brown the ground beef; drain excess fat and set aside.
- Melt butter in the pot, then sauté the onion and celery until softened.
- Add garlic and flour; cook for about 2 minutes until smooth.
- Whisk in chicken broth until combined, then stir in heavy cream, Worcestershire sauce, potatoes, and browned beef.
- Bring to a boil, reduce heat, cover slightly ajar, and simmer for 15 minutes or until potatoes are tender.
- Remove from heat and mix in the cheddar cheese until melted. Stir in most of the bacon (reserve some for garnish) and season with salt and pepper.
