  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ⅔ cup granulated sugar (for cinnamon mixture)
  • ¼ cup ground cinnamon
  • ½ cup whipping cream (or sour cream/Greek yogurt)
  • 1 cup powdered sugar (for icing)
  • 23 tablespoons cream or milk (for icing)
  • ½ teaspoon vanilla extract (for icing)

Instructions

  1. Preheat oven to 350°F and grease your bundt pan well.
  2. In a bowl, combine sugar and cinnamon for the swirl mix; set aside.
  3. Cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  4. In another bowl, whisk flour and baking powder; gradually add to the wet mixture alternating with whipping cream.
  5. Fold in half of the cinnamon-sugar mixture into the batter.
  6. Pour half the batter into the bundt pan, sprinkle with half of the cinnamon-sugar mixture, add remaining batter, and top with leftover cinnamon-sugar.
  7. Bake for about 55 minutes or until a toothpick comes out clean.
  8. Cool before icing with a mixture of powdered sugar, milk/cream, and vanilla.
