  • 2 servings dry instant ramen noodle cakes (about 140 g)
  • 10 oz extra firm tofu or choice of veggies/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 2 tbsp rice vinegar
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • Chopped scallions and sesame seeds for garnish

Instructions

  1. In a mixing bowl, combine the sauce ingredients: water/broth, soy sauce, corn starch, rice vinegar, chili garlic sauce, and sesame oil. Mix well.
  2. Boil water in a large pot and cook the ramen noodles for about 2-3 minutes less than package instructions until al dente. Drain and set aside.
  3. Heat a non-stick pan over medium-high heat with oil, then sauté the tofu/veggies until cooked.
  4. Add the prepared sauce to the pan with sautéed ingredients and simmer for 2-3 minutes until thickened.
  5. Toss in the drained noodles and cook for an additional 3 minutes until well-coated in sauce.
  6. Serve hot, garnished with chopped scallions and sesame seeds.
