- 2 servings dry instant ramen noodle cakes (about 140 g)
- 10 oz extra firm tofu or choice of veggies/mushrooms (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 2–3 tbsp corn starch
- 2 tbsp rice vinegar
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- Chopped scallions and sesame seeds for garnish
Instructions
- In a mixing bowl, combine the sauce ingredients: water/broth, soy sauce, corn starch, rice vinegar, chili garlic sauce, and sesame oil. Mix well.
- Boil water in a large pot and cook the ramen noodles for about 2-3 minutes less than package instructions until al dente. Drain and set aside.
- Heat a non-stick pan over medium-high heat with oil, then sauté the tofu/veggies until cooked.
- Add the prepared sauce to the pan with sautéed ingredients and simmer for 2-3 minutes until thickened.
- Toss in the drained noodles and cook for an additional 3 minutes until well-coated in sauce.
- Serve hot, garnished with chopped scallions and sesame seeds.
