  • 1 large Egg
  • 1/4 cup Almond Milk (or soy milk, or any milk of choice)
  • 1/2 cup Granulated Sweetener (sugar-free brown erythritol or coconut sugar or brown sugar)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Oat Flour (or all-purpose flour lightly packed)
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Line an 8-inch x 8-inch brownie pan with parchment paper and set aside.
  3. Melt 1/3 cup of chocolate chips with coconut oil in a microwave-safe bowl; let cool.
  4. In one bowl, whisk together oat flour, cocoa powder, sweetener, baking powder, and salt.
  5. In another bowl, combine Greek yogurt, egg, vanilla extract, almond milk, and cooled chocolate mixture until smooth.
  6. Gradually mix dry ingredients into wet ingredients using a silicone spatula; be careful not to overmix.
  7. Fold in the remaining chocolate chips.
  8. Pour batter into the prepared pan and bake for 20-23 minutes or until a toothpick comes out clean.
