Instructions
- Sauté onion in olive oil in the Instant Pot for 5-6 minutes until soft.

- Stir in chopped carrots, broth, salt, pepper, and thyme.
- Secure lid and cook on high pressure for 5 minutes.
- Allow natural pressure release for ten minutes before manually releasing the rest.
- Blend until smooth using an immersion blender; add coconut milk and lime juice.
- Adjust seasoning if necessary before serving.
