Kashmiri Pink Chai, also known as Noon Tea, is a delightful and aromatic beverage that embodies the essence of Kashmiri culture. This enchanting tea features a unique blend of green tea, spices, and milk, resulting in a striking pink hue that captivates the eye and comforts the soul.


Ingredients

  • 4 cups water
  • 2 tbsp Kashmiri green tea
  • 1/2 tsp baking soda
  • 12 star anise
  • 2 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp salt
  • 2 cups whole milk
  • Sugar or honey to taste
  • Optional: crushed nuts for garnish

Instructions

  1. Boil water in a saucepan. Add green tea and boil for 5 minutes.
  2. Stir in baking soda; observe the color change to deep red. Boil for another 2 minutes.
  3. Add star anise, cardamom, and cinnamon; boil for an additional minute.
  4. Reduce heat and simmer for 20-30 minutes until reduced by half.
  5. Incorporate salt into the mixture.
  6. Pour in whole milk while stirring; bring to a boil and watch it turn pink.
  7. Strain into cups to remove spices and leaves.
  8. Sweeten as desired and garnish with crushed nuts if using.
