Ingredients
- 5 mini cucumbers

- 1.5 tsp soy sauce

- 2–3 tsp chili oil
- 3 tsp sugar
- 1 tsp sesame oil
- 2 tsp sesame seeds (optional)
- 3 tbsp green onions (optional)
Instructions
- In a bowl, mix minced garlic, sugar, sesame seeds, green onions, rice vinegar, soy sauce, chili oil, and sesame oil until well combined.
- Slice cucumbers thinly and sprinkle with salt. Let sit for 8–12 minutes to draw out moisture.
- Rinse cucumbers under cold water and pat dry.
- Combine cucumbers with the marinade in a bowl and toss gently to coat.
- Serve topped with additional sesame seeds and green onions if desired.
