Instructions

  1. Prepare the lemon curd by whisking together lemon juice, sugar, corn starch, and egg yolks in a saucepan over medium heat until thickened. Stir in butter and lemon zest; let cool.
  2. Preheat the oven to 350°F (175°C). In a mixing bowl, cream butter and sugar until fluffy. Beat in eggs and vanilla extract, followed by lemon zest.
  3. Whisk together flour, baking powder, baking soda, and salt; gradually combine with wet ingredients.
  4. Scoop dough onto a lined baking sheet and create indents with your thumb. Fill each with lemon curd.
