Ingredients

  • 85 grams jelly crystals
  • 125 mls cream (tinned, thickened, or heavy)
  • 12 pieces Tiramisu sponge fingers
  • 1/2 cup port, sherry, or juice
  • 1 1/2 cups custard (store-bought or homemade)
  • 400 grams mixed berries
  • 200 mls thickened cream
  • 1 teaspoon custard powder
  • Fresh mint leaves for garnish

Instructions

  1. Prepare the jelly according to package instructions and pour into dessert dishes. Chill until set.
  2. When the jelly is almost set, mix the remaining jelly with cream and beat until smooth.
  3. Pour the jelly and cream mixture over the set jelly layers.
  4. Crush sponge fingers and soak them in port or juice; layer over the cream mixture.
  5. Add custard over the sponge layer followed by fresh berries.
  6. Whip thickened cream with custard powder to stiff peaks and pipe on top.
  7. Decorate with reserved berries and mint leaves.
