  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Spices: paprika, Italian seasoning, salt, black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Cook spaghetti according to package directions until al dente; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper; cook until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, melt butter; sauté chopped onion for 3-4 minutes then add minced garlic for another 30 seconds.
  4. Pour in chicken broth and heavy cream; bring to gentle simmer for about 5 minutes.
  5. Add cooked spaghetti and chicken back into the skillet; toss until well coated in sauce.
  6. Sprinkle cheese on top; cover and let sit for 2-3 minutes until melted.
  7. Garnish with fresh parsley before serving.
