  • 2 cups graham cracker crumbs

  • 1/2 tsp cinnamon
  • 2 cups white chocolate chips

Instructions

  1. In a mixer bowl, beat cream cheese and powdered sugar until light and creamy (about 2-3 minutes).
  2. Add pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon; mix until combined. Then stir in remaining graham crackers.
  3. Chill the dough covered in the fridge for at least 30 minutes.
  4. Prepare a parchment-lined baking sheet. Roll chilled dough into tablespoon-sized balls and refrigerate again for another 30 minutes.
  5. Melt white chocolate chips in a microwave-safe bowl until smooth.
  6. Dip each pumpkin ball in melted chocolate, tapping off excess before placing on the baking sheet.
  7. Drizzle remaining chocolate over the truffles and top with sprinkles or graham cracker crumbs if desired.
  8. Chill again for 20-30 minutes before serving.
