- 2 cups heavy cream
- 6 cups sugar (divided)
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1 1/2 cups chopped walnuts or pecans
Instructions
- Lightly grease a 9×13-inch baking dish.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently until liquefied (about 20 minutes).
- In a large saucepan or Dutch oven, combine remaining 4 cups of sugar and heavy cream; simmer on low heat.
- Once the first batch of sugar is melted, pour it into the larger saucepan while stirring continuously.
- Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
- Remove from heat and stir in baking soda, then add butter and vanilla until smooth.
- Allow to rest for about 20 minutes before stirring in chopped nuts.
- Pour into the greased baking dish and let cool for at least 1-2 hours before slicing.
