  • 1 cup raspberry jam
  • Vegan cream cheese frosting (2 batches)
  • Fresh raspberries and crushed almonds for decoration

Instructions

  1. Preheat your oven to 350°F and prepare two 8-inch cake pans with parchment paper.
  2. In a large bowl, whisk together sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until combined.
  3. Add ground almonds, flour, baking powder, baking soda, and salt. Gradually mix in the vegan buttermilk until just combined.
  4. Divide the batter between prepared pans and bake for 40-42 minutes or until a toothpick comes out clean.
  5. Cool in pans for about 10 minutes before transferring to a cooling rack. Slice each layer in half to create four layers.
  6. Prepare the vegan cream cheese frosting as directed.
  7. Assemble by layering cake with frosting and raspberry jam. Chill briefly before frosting the exterior. Decorate as desired.
