  • 16 baby yellow potatoes
  • ½ stick unsalted butter (4 tablespoons), melted
  • 1.5 teaspoons garlic powder
  • 1 tablespoon Italian seasoning (or oregano)
  • 1 teaspoon salt (to taste)
  • ½ cup grated Parmesan cheese
  • For the yogurt sauce: ½ cup plain yogurt
  • 1 teaspoon olive oil
  • salt (to taste)
  • fresh dill (finely chopped)

Instructions

  1. Boil the baby potatoes in salted water until tender (15-20 minutes). Drain and let cool slightly.
  2. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  3. In a mixing bowl, stir together melted butter, garlic powder, Italian seasoning, salt, and Parmesan cheese.
  4. Place boiled potatoes on the sheet pan and gently smash each potato using a glass or potato masher.
  5. Brush each smashed potato with the butter and cheese mixture.
  6. Bake for approximately 30 minutes until golden brown and crispy.
  7. For the yogurt sauce, mix yogurt, olive oil, salt, and dill in a bowl.
