- 16 baby yellow potatoes
- ½ stick unsalted butter (4 tablespoons), melted
- 1.5 teaspoons garlic powder
- 1 tablespoon Italian seasoning (or oregano)
- 1 teaspoon salt (to taste)
- ½ cup grated Parmesan cheese
- For the yogurt sauce: ½ cup plain yogurt
- 1 teaspoon olive oil
- salt (to taste)
- fresh dill (finely chopped)
Instructions
- Boil the baby potatoes in salted water until tender (15-20 minutes). Drain and let cool slightly.
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a mixing bowl, stir together melted butter, garlic powder, Italian seasoning, salt, and Parmesan cheese.
- Place boiled potatoes on the sheet pan and gently smash each potato using a glass or potato masher.
- Brush each smashed potato with the butter and cheese mixture.
- Bake for approximately 30 minutes until golden brown and crispy.
- For the yogurt sauce, mix yogurt, olive oil, salt, and dill in a bowl.
