  • 1 cup full-fat coconut milk
  • 1/2 cup fish stock or water
  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon fresh ginger, grated
  • Zest and juice of 2 limes
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • Salt and pepper, to taste

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. Heat olive oil or butter in a skillet over medium heat. Add onions and sauté until translucent (3-4 minutes). Add garlic and ginger; cook until fragrant (1 minute).
  3. Stir in coconut milk and fish stock/water. Add lime zest, juice, soy sauce, salt, and pepper; bring to a gentle simmer.
  4. Carefully place salmon fillets into the sauce. Cover and poach for 10-15 minutes until opaque and easily flakes apart.
