  • 8 oz butter, room temperature
  • 1 tablespoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 7 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and prepare three 8-inch cake pans.
  2. In a large bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla extract.
  3. In another bowl, combine flour, baking powder, baking soda, spices, and salt. Gradually mix into the wet ingredients until combined.
  4. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  5. For the salted caramel: Melt sugar in a saucepan until golden, then carefully stir in butter and heavy cream. Add salt and let cool.
