Instructions

  1. Wash the raspberries and combine them with granulated sugar and lemon juice in a mixing bowl. Lightly mash to release juices.
  2. In another bowl, whip the chilled heavy cream until soft peaks form, then gradually add powdered sugar and vanilla extract until stiff peaks form.
  3. Gently fold the raspberry mixture into the whipped cream using a rubber spatula.
  4. If using gelatin, dissolve it in cold water and fold it into the mousse mixture.
