Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • ½ cup mayonnaise
  • 12 tablespoons sriracha, adjust to taste
  • 2 cups cooked jasmine or brown rice
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1 cup cucumber slices
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a mixing bowl, toss shrimp with olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and optional cayenne until evenly coated.
  2. Heat a skillet over medium-high heat. Cook the shrimp in a single layer for about 2–3 minutes on each side until pink and opaque. Remove from heat.
  3. In another bowl, whisk together mayonnaise, sriracha, and lime juice to make the spicy mayo.
  4. To assemble the bowls, place cooked rice as the base and top with cooked shrimp, carrots, avocado slices, cucumber, and green onions. Drizzle with spicy mayo and sprinkle sesame seeds before serving.
