Ingredients
- 2 lbs beef chuck roast or sirloin
- 1.5 lbs baby potatoes or Yukon Gold potatoes
- 4 tbsp unsalted butter
- 6 cloves garlic
- 1/2 cup beef broth
- 1 tsp dried thyme or 1 tbsp fresh thyme
- 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp olive oil, for searing (optional)
- 1/2 tsp salt for potatoes
- 1/4 tsp black pepper for potatoes
Instructions
- Cut beef into 1-inch cubes and season with salt, pepper, garlic powder, and smoked paprika.
- Optionally sear the beef in olive oil until browned.
- In a bowl, mix halved potatoes with olive oil and seasoning before layering them on top of the beef in the slow cooker.
- Combine melted butter, minced garlic, broth, thyme, rosemary, and Worcestershire sauce in a bowl; pour over the layered ingredients.
- Cook on low for 8 hours or high for 4 hours until beef is tender.
