  • ½ cup all-purpose flour

  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat the oven to 350 degrees F. Prepare an 8×8 inch baking pan by spraying it with nonstick spray or lightly greasing with oil. Line the pan with parchment paper so that some hangs over two sides. Set aside.
  2. In a food processor, blend up the graham crackers and sugar until they reach a fine crumb consistency. Pulse in the melted butter until all of the crumbs are coated. Add this mixture into the prepared pan. Press down firmly with a cup or spatula to ensure it is compact and even.
  3. Bake the crust in the oven for about 15-20 minutes until golden brown around the edges and slightly puffed up. Set aside to cool for a few minutes.
  4. In a medium bowl, mix together vegetable oil, sugar, eggs, and vanilla extract using a whisk until just combined. Add cocoa powder, flour, salt, and baking powder to this mixture. Continue whisking until smooth with no streaks of cocoa powder visible. Fold in chocolate chips; expect thick batter.
  5. Gently pour brownie batter over the cooled crust in your pan. Use a knife or small offset spatula to spread it evenly across. Bake in the oven for 30-40 minutes until set; ensure there is no jiggling in the center.
