Ingredients
- ¼ cup non-dairy or regular dairy milk (110℉)
- 1 ½ teaspoons instant yeast
- 2 cups + 1 tablespoon all-purpose flour
- 200 grams sourdough discard (unfed, room temperature)
- 1 egg (lightly beaten)
- 2 tablespoons unsalted butter (melted)
- Fresh parsley or rosemary (chopped)
- Garlic powder
- Kosher salt
Instructions
- In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, garlic powder, and melted butter.
- Mix on low speed until shaggy dough forms. Knead on a floured surface for about 3–4 minutes until smooth.
- Place in a greased bowl, cover with plastic wrap, and let rise for 60–90 minutes until doubled.
- Prepare the topping by mixing softened butter with herbs and garlic powder; set aside.
- After rising, divide dough into twelve pieces. Flatten each piece, spread with the topping mixture, fold in half, and place in a greased loaf pan.
- Cover and let rise for another 30–45 minutes until puffed.
- Preheat oven to 350℉ and bake for 30 minutes covered with foil for an additional 5–10 minutes until golden brown.
- Brush with remaining topping while warm and sprinkle with flaky sea salt.
