Ingredients

  • Extra firm tofu
  • Cilantro lime rice
  • Black beans
  • Red and orange bell peppers
  • Avocado
  • Sriracha
  • Spicy tahini dressing

Instructions

  1. Preheat the oven to 400°F.
  2. Press the tofu for 5–10 minutes to remove excess moisture, then cube it.
  3. In a mixing bowl, combine dry spices (coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, salt).
  4. Coat cubed tofu with olive oil and sriracha; toss with spice mixture until evenly coated.
  5. Spread tofu on a baking sheet lined with parchment paper alongside sliced bell peppers.
  6. Roast for 20 minutes; brush with remaining sriracha mixture and bake for an additional 10–15 minutes until crispy.
  7. Assemble the bowl starting with rice as the base, followed by black beans, roasted peppers, baked tofu cubes, diced avocado, and drizzle with spicy tahini dressing.
