  • 8 oz Mushrooms (sliced)
  • 3 cloves Garlic (minced)
  • 4 cups Baby Spinach
  • 1/4 cup Parmesan Cheese (grated)
  • Salt and Black Pepper (to taste)
  • Red Pepper Flakes (optional)
  • Fresh Parsley (optional, chopped)

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 5–7 minutes until browned.
  3. Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
  4. Add baby spinach to the skillet and cook for 2–3 minutes until wilted.
  5. Toss the cooked orzo into the skillet, mixing thoroughly with mushrooms and spinach.
  6. Remove from heat and sprinkle with Parmesan cheese. Season with salt and black pepper to taste.
  7. Garnish with red pepper flakes and parsley if desired before serving warm.
