  • 2 packages cream cheese (8 ounces each, room temperature)
  • 2 large eggs (room temperature)
  • ⅓ cup granulated sugar
  • 2 cups fresh strawberries (diced)
  • ¾ cup all-purpose flour
  • ¼ cup light brown sugar (packed)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl until it resembles wet sand. Press this mixture into the bottom of the prepared dish to form the crust.

  4. Top with diced strawberries evenly distributed across the cheesecake layer.
  5. For the crumble topping, whisk flour, brown sugar, and salt; stir in melted butter until crumbly. Sprinkle over strawberries.
  6. Bake for 35–40 minutes until set. Allow to cool completely before refrigerating for one hour before serving.
