- ¼ cup creamy peanut butter
- ¼ cup soy sauce
- ½ cup coconut milk
- 2 tablespoons honey
- 1 tablespoon sriracha (to taste)
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- Lime juice and garnishes (chopped peanuts and cilantro)
Instructions
- Gather all ingredients and finely chop garlic and ginger.
- Heat vegetable oil in a skillet over medium heat. Add the chicken and cook until golden brown on both sides (5-7 minutes each side). Remove from the skillet.
- In the same skillet, sauté garlic and ginger until fragrant. Stir in peanut butter, soy sauce, coconut milk, honey, sriracha, and lime juice until smooth.
- Return the chicken to the skillet and coat with the peanut sauce. Let it simmer for an additional 5 minutes.
