Ingredients

  • Firm tofu
  • Nondairy milk (oat, soy, almond, or cashew)
  • Nutritional yeast
  • Dijon mustard
  • Turmeric
  • Paprika
  • Garlic powder
  • Onion powder
  • Large tortillas
  • Vegan cheese
  • Avocado
  • Fresh kale or spinach

Instructions

  1. Crumble the pressed tofu into 1-inch chunks.
  2. In a bowl, mix nondairy milk, nutritional yeast, Dijon mustard, turmeric, paprika, garlic powder, onion powder, and kala namak.
  3. Heat oil in a skillet over medium-high heat and cook tofu for 7 minutes until golden.
  4. Stir in the sauce mixture and cook for an additional 2 minutes.
  5. Assemble wraps by layering vegan cheese, avocado slices, sautéed greens, and tofu scramble onto tortillas. Fold tightly.
  6. Optionally heat wraps in the skillet for 2 minutes on each side until golden brown.
