Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • Optional: Red pepper flakes, grated Parmesan cheese, fresh basil

Instructions

  1. Cook pasta in boiling salted water until al dente; reserve 1/2 cup pasta water before draining.
  2. In a skillet over medium heat, sauté garlic in olive oil for 1 minute. Add shrimp; cook until pink (about 3-4 minutes).
  3. Stir in cherry tomatoes; cook until softened. Add spinach; stir until wilted.
  4. Pour in chicken broth and reserved pasta water; season with salt, pepper, and red pepper flakes if desired.
  5. Toss in cooked pasta until well combined; serve garnished with Parmesan cheese and basil.
