- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 4 cups fresh spinach
- Salt and pepper to taste
- Optional: Red pepper flakes, grated Parmesan cheese, fresh basil
Instructions
- Cook pasta in boiling salted water until al dente; reserve 1/2 cup pasta water before draining.
- In a skillet over medium heat, sauté garlic in olive oil for 1 minute. Add shrimp; cook until pink (about 3-4 minutes).
- Stir in cherry tomatoes; cook until softened. Add spinach; stir until wilted.
- Pour in chicken broth and reserved pasta water; season with salt, pepper, and red pepper flakes if desired.
- Toss in cooked pasta until well combined; serve garnished with Parmesan cheese and basil.
