Ingredients
- 20 oz cheese tortellini
- 10 oz cherry tomatoes, halved
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves, minced
- Italian seasoning, salt, and pepper to taste
Instructions
- Bring a large pot of salted water to boil. Add cheese tortellini and cook until al dente per package instructions.
- While the tortellini cooks, chop cherry tomatoes, spinach, basil, and mince garlic.
- Strain cooked tortellini and rinse briefly under cool water.
- In a mixing bowl, combine the rinsed tortellini with spinach, tomatoes, mozzarella, basil, and garlic. Drizzle with olive oil and balsamic vinegar; season with Italian seasoning, salt, and pepper.
