Ingredients

  • 2 cans chickpeas
  • 1 medium carrot
  • 1 stalk celery
  • 1/2 red bell pepper
  • 3 green onions
  • 1/2 cup hummus
  • 3 tablespoons hot sauce
  • Salt and pepper to taste
  • Whole grain bread (12 slices)
  • Optional toppings: spinach, tomatoes, cucumbers

Instructions

  1. In a medium bowl, mash the drained chickpeas with a fork or potato masher until mostly mashed but still chunky.
  2. Add chopped carrot, celery, green onions, red bell pepper, hummus, hot sauce, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
  3. Spread the chickpea mixture onto one slice of bread and top with your choice of fresh veggies.
  4. Close the sandwich with another slice of bread. Cut in half if desired and serve immediately or pack for later.
