  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large eggplant, cubed
  • 6 oz fresh spinach, chopped
  • Vegan cheese sauce (homemade or store-bought)
  • Seasonings: soy sauce, balsamic vinegar, onion powder, paprika, cumin

Instructions

  1. Heat oil in a skillet over medium heat. Sauté onion until translucent.
